Irish Soda Bread

Ingredients:

4 cups All purpose Flour
1/2cup Sugar
1/4teaspoon Baking Soda
2 teaspoons Baking Podwer
1/2 teaspoon Salt
1/2 cup Unsalted Butter
1 1/4 cups Currants
1 1/4 teaspoons Caraway Seed
2 Eggs
1 1/4cups Buttermilk


Preheat oven to 350 Mix first 5 ingredients in a large bowl. Dice Butter into small pieces. Work Butter into dry ingredients as if making pie crust. Mixture should resemble coarse meal. Add in Currants and Caraway Seeds. In another bowl whisk together Eggs and Buttermilk. Pour into coarse meal mixture. Work together only until mixture is homogenized and uniform. Do Not Over Work. Turn onto floured board. Shape into flat disc. Grease and flour a 9" cast iron skillet. Place dough disc into prepared pan. Cut a cross onto top of loaf. Bake for 45 min to 1 hr.
