Yogurt Fritter with Pepper Infused Honey

by Alex Raij

1 lb of OIKOS yogurt

The zest from one lemon

The juice from one lemon

3 eggs

1 cup flour

1 cup of cake flour

2 tbsp. of baking soda

1/2 cup of sugar

A pinch of salt

Enough vegetable oil to fill pan 2"

Fresh hot seasoning peppers

2 tbsp. of honey

1 tsp Orange blossom water (optional)

Batter:

Mix all ingredients in a bowl and allow to rest for twenty minutes at room temperature. Use deep fryer or pan to bring vegetable oil (such as canola oil) to 375 degrees. Gently drop teaspoons of batter into the oil so they float. Cook dough balls on all sides, until dark brown. Remove balls and place on paper towel to remove excess oil. Place balls on plate and drizzle with the honey-pepper mixture. Enjoy!

Sauce:

Warm honey in microwave for 15-30 seconds. Mix honey, chopped seasoning peppers, lemon juice, and orange blossom water in a small bowl. Allow flavors to infuse.
