Farmer's Tomato Sauce

Serves 4+

a lot of Heirloom Tomatoes
plum tomatoes
walla walla onions (or whatever you have)
bay leaf
whatever fresh herbs you have (basil, parsley, thyme, etc.)
2 tbsp. olive oil

To make sauce: Heat up oil in a large soup pot, throw in garlic + onion, cook until slightly browned. Then, throw in those tomatoes, bay leaf, salt and herbs and cook it down. Add plum tomatoes to thicken the sauce. This takes hours, so start early and just cook it down 'til dinner!
