Lemon Sorbet


1 cup of water
1 cup of sugar
3/4 cup of freshly squeezed lemon juice
4 tablespoons of lemon zest

Heat the water over medium heat in a medium sized saucepan. Add the sugar to the water and stir until all the sugar is dissolved. Next, bring the sugar-water mixture to a boil. After boiling, allow the mixture to simmer for a few minutes more. Remove the mixture from the burner and let cool. You now have a simple sugar syrup. After the syrup has cooled, add the lemon juice and the lemon zest and stir. Chill in the refrigerator. When the mixture is chilled, add it to your ice cream maker. Enjoy!
