Eggplant
Days to Harvest: 100 to 150 days from seed; 70 to 85 from transplants
Light: Sunny.
Temperature: Warm season, 70° to 85° F
Companions: Beans, peppers, marigolds, tarragon, mints
Preparation: Plants should be grown indoors 8 to 9 weeks before setting out.
Planting: Transplant after danger of frost.
Spacing: 18 to 24 inches between plants, 3 feet between rows.
Water: 1 inch a week so they don't dry out.
Harvest: Pick fruit when immature, about 2/3 maximum size when skin is glossy.
Tips: When plants are 6 inches high, nip back growing tip to encourage branching. Mature fruit should not be left on plant or overall productivity will be reduced.
